A founder and Executive Chef of Restaurant-I. He was born in 1977 and raised in Fukuoka, Japan. Graduated from TSUJI Culinary Institute in Tokyo, he worked at “Vincennes” a legendary French restaurant in Shibuya. He went abroad to France at age of twenty and pursued his techniques in all over France such as Jardin des sens, Restaurant Michel saran, Auberge de la clos des Cimes and more. On his twenty-fifth birthday in 2002, he opened the restaurant “Kei’s Passion” in Nice, France. Using of south France’s natural resources as a fountainhead for his unique cuisine, after three years from opening, his restaurant won a star on the French Michelin Guide. He was the youngest person to get a star among foreigner. In the same year, he expanded his restaurant and renamed it to “KEISUKE MATSUSHIMA”. The restaurant has been winning a star on the Michelin ever since. Adapting his training and technique to create a restaurant themed, “locally produced and consumed”, he opened “Restaurant-I” in Jingu-mae, Tokyo, in June 2009, which also won a star of the Tokyo Michelin Guide 2011. Keisuke Matsushima received L'Ordre des Arts et des Lettres (Order of Arts and Letters) from French government as the first Japanese chef and also the youngest. In October 2010, he received the title of The Fifth Sake Samurai from Japan Sake Brewers Association for his achievement in introducing Japanese Sake culture to all over the world. His publications include Matsushima Keisuke no Iedemo Oishii French (Delicious French at home), and also a critical biography by Norishi Kamiyama: Jyonetsu no chef, Minami France Matsushima Keisuke no Chousen (Challenges of Keisuke Matsushima, chef with a great passion).

The owners, Philippe and Patrick are good friends of mine. There is a DJ booth so night out here is a fan too. They have opened their beach area lately so spending summer in this hotel is highly recommended.

Being on the hill along the coast, the hotel has the most beautiful view of Nice. I like their warm hospitality. Hotel from/to airport could be one of the best jogging courses around here.
